Meet Catherine: Equal Eats Trailblazer for July

This July, we’re excited to introduce Catherine Walker, the creator behind Cook It Up Catherine, as our newest Equal Eats Trailblazer.
Catherine has been living with food allergies since childhood, and her journey into advocacy began early. At just 14 years old, she published her first cookbook, Cook It Up, helping others in the allergy community feel more confident, supported, and less alone.
Since then, Catherine has continued to share her experiences through content creation, travel, and storytelling. Her mission is simple but powerful: to show that life with food allergies can still be full of adventure, independence, and joy.

Traveling Abroad with Food Allergies
Catherine recently spent a year living in Scotland, where she learned how to manage her allergies independently while navigating new foods, restaurants, grocery stores, and labeling systems.
That experience gave her a new perspective on what it means to travel and live abroad with allergies. It also strengthened her confidence in preparing ahead, asking questions, and using tools like Equal Eats allergy translation cards to communicate clearly and safely.
What’s Next: Norway and Beyond
As part of her Equal Eats Trailblazer partnership, Catherine will be sharing content from her upcoming solo trip to the Lofoten Islands in Norway.
She’ll be highlighting what it’s like to travel solo with food allergies, including packing tips, planning strategies, and how Equal Eats cards help make dining and travel feel more accessible.
Catherine is also preparing to move back to Scotland for graduate school this September, where she plans to expand her content around living with food allergies in your 20s.
