Meet Lindsey Taylor, one of our incredible 2023 Equal Eats Ambassadors.
Occupation:
Internal Medicine Resident
What are some of your favourite hobbies, interests and activities?
I love to explore nature and exercise through various forms, such as hiking, biking, yoga and lifting. Most importantly, I enjoy traveling and spending time with my husband.
What countries have you travelled to?
Jamaica, Haiti, Mexico, Honduras, Canada, Ireland, Denmark, France, England, Scotland, Italy, Austria, Hungary, Germany, Sweden, Belgium, Netherlands, and Spain.
What's your dream travel destination?
Torn between Greece, Iceland, and New Zealand.
What's your relationship to dietary restrictions? (e.g. you/your child, allergy/celiac)
I have celiac disease and multiple food allergies.
What led you to become an Equal Eats ambassador? (why is their mission important to you?)
I wanted to become an Equal Eats ambassador in order to empower others that their food allergy does not have to be seen as an inconvenience to others. As someone who wants to pursue medicine, I have seen the impact of food allergies in my patients and in myself. I wanted to be a part of a group who seeks to embolden their consumers in an area where patient’s with dietary restrictions are hesitant and even fearful.
What do you find is the most challenging aspect of managing a dietary restriction?
The most challenging aspect about managing a dietary restriction for me is navigating new food environments, whether that is at work when take out is ordered or in a new restaurant where I have yet to become familiar with the staff and the menu.
What's the one bright side you have found of managing a dietary restriction?
I have found my passion within medicine and want to provide hope to my future patients that life is not all restriction after a dietary restriction diagnosis.
What's your goal or impact you'd like to achieve being an Equal Eats ambassador?
My goal would be to increase food allergy awareness among my inner circle and beyond and to advocate for those who struggle with food allergies within the patient-provider relationship, as well as in legislation.
